Ingredients

  • 1 sheet Puff pastry sheet
  • 400 g Ground pork sausage meat
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 piece Jalapeño pepper, minced
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Red chili flakes
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 large Egg (for wash)
  • 1 teaspoon Water (for wash)
  • 1 teaspoon Olive oil
  • 0.5 cup Cheddar cheese, grated (optional)
  • 1 tablespoon Sesame seeds or poppy seeds (optional)

Instructions

  1. 1.Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. 2.In a skillet, heat olive oil over medium heat. Add the onion and cook until translucent, about 4–5 minutes.
  3. 3.Add the garlic and jalapeño, cook 1 minute. Stir in smoked paprika and chili flakes; cook briefly to release aromas. Remove from heat and let cool slightly.
  4. 4.In a bowl, mix sausage meat with parsley, Dijon mustard, salt and pepper. Fold in the cooled onion mixture. If using, fold in grated cheddar.
  5. 5.Roll out the puff pastry on a lightly floured surface to a rectangle about 30 cm by 20 cm (12 by 8 in). Place the filling along the center length.
  6. 6.Brush pastry edges with beaten egg. Fold pastry over the filling to form a tight log and seal the seam. Turn seam-side down.
  7. 7.Chill the filled log for about 10 minutes to firm up for cleaner slicing.
  8. 8.Slice the log into 4 equal portions. Place pieces on the prepared baking sheet. Brush tops with the remaining beaten egg and sprinkle sesame seeds if using.
  9. 9.Bake for 20–25 minutes, rotating the sheet halfway, until the pastry is golden and cooked through.
  10. 10.Let rest for 5 minutes before serving. Serve with a spicy dipping sauce or aioli if desired.
